Vegetarian Ragù.
A rich, tasty, light, and simple dish to prepare!
Vegetarian ragù pasta is a very simple first course to make, economical, tasty, and flavorful, a light yet substantial dish, rich in flavor even with few ingredients 🙂
Perfect for Sunday lunch, if you have guests, during the week, and anytime you want to treat yourself with a simple yet very tasty dish.
To prepare this vegetarian ragù, it must be cooked slowly on a very low flame; it will take some time, but it’s really worth it 😉

Ingredients
- 1 onion
- 1 shallot
- 4 carrots
- 3 stalks celery
- 3.4 cups tomato puree
- 0.7 oz tomato paste (you can also skip it)
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
- to taste chili pepper (optional)
- 0.8 lbs mezzi rigatoni pasta (or preferred pasta shape)
- 3.5 oz grated cheese

Steps
Let’s prepare the vegetarian ragù, you can make it in advance, a few hours ahead, or the day before, it will be even tastier.
Peel the onion and chop it very finely, rinse the carrots, peel them lightly, and cut them into very small cubes.Clean the shallot and chop it, do the same with the celery.
Put a little oil in a pot (also clay if you prefer), add the chopped vegetables: onion, leek, celery, and carrot, and let them flavor on a very low flame for about ten minutes, stirring often.Add the tomato puree, tomato paste, salt, a dash of pepper, and if you like, a bit of chili pepper. Cover with a lid and bring to a boil, then lower the heat to the minimum and continue cooking for about 2 hours, stirring occasionally at first and more often towards the end of the cooking.
If it dries out too much during this time, add a little water; the vegetarian ragù must simmer and cook slowly like a meat ragù.
When there are 20 minutes left to finish cooking the ragù, put a pot with plenty of salted water on the stove to cook the pasta.
As soon as the water reaches a boil, cook the pasta one minute less than the time indicated on the package, drain the pasta and pour it into the sauce, add 3/4 of the grated cheese, a few basil leaves, and mix for about a minute to combine everything.
Divide the pasta among the plates and sprinkle the remaining cheese on top.
