Tired of dry and flavorless chicken breast? The Accordion Chicken Breast will change your mind. A very simple and flavorful dish with lots of good smoked provolone, slices of bacon, and plenty of black pepper that invites you just by looking at it.
A simple main course that you can also prepare in advance and pop in the oven before sitting at the table, serve with a green salad or even some mashed potatoes and everyone will love it.
Don’t have bacon and have another cold cut? Use it and it will be just as good, maybe even better than mine 😉

Ingredients for Accordion Chicken Breast
- 2 chicken breast
- 5 oz smoked bacon (in slices)
- 3.5 oz provolone (also smoked)
- 3 tbsps extra virgin olive oil
- to taste black pepper
Preparation of Accordion Chicken Breast
Divide the chicken breasts, remove the central bone and cartilage, also remove the skin if present.
Make incisions on the top of each breast without cutting all the way through, spacing them approximately 3/8 inch apart.
Season the chicken with freshly ground black pepper, also putting some inside the cuts. I did not add salt because both the bacon and cheese are very salty.
Adjust according to your taste.
In a pan that can also go in the oven, heat the extra virgin olive oil, then sear the chicken breasts on both sides for 3 or 4 minutes.
Meanwhile, preheat the oven to 392°F in static mode.
Remove the pan from the heat, then stuff each incision with a slice of bacon and one or two slices of provolone.
If you prefer, you can grate the provolone and sprinkle it into the cuts.
Transfer the pan to the center rack of the oven and bake the accordion chicken breast for 15/20 minutes, then activate the grill for an additional 5 or 6 minutes to brown the surface.
Serve immediately accompanied by a salad or mashed potatoes.
Storage, Tips, and Variations
The accordion chicken can be stored in the refrigerator for 2 days in a tightly sealed container.

You can freeze it once cooked and cooled down, or after searing and stuffing it with cheese and bacon, so it’s ready to cook when needed.
Use the cheese you prefer, either in thin slices or coarsely grated.
You can replace the smoked bacon with bacon or speck, or for a milder flavor, with cooked ham.
