Delicate in flavor and very good, soft and sweet just right, I love apple cakes so I try them in every possible and imaginable way, I wanted to make it with yogurt but since I had mascarpone I tried it and I must say that everyone who tasted it was very happy, even having seconds.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 5 oz mascarpone
  • 4 oz sugar
  • 2 Granny Smith apples
  • 3 eggs
  • 1 packet baking powder for desserts
  • 1 tsp ground cinnamon

  • 1 cake pan
  • 1 bowl
  • 1 blender

Preparation

  • To prepare the apple and mascarpone cake first beat the eggs with the sugar using electric beaters.

    You should get an almost white and very fluffy mixture.

  • Then sift the flour together with the baking powder and start adding it to the egg mixture a little at a time using a wooden spoon.

  • Finally, add the mascarpone which you have previously softened using a fork to make it creamier.

  • Incorporate the mascarpone very well into the apple and mascarpone cake with firm movements from bottom to top to avoid deflating the mixture.

  • Meanwhile, preheat the oven to 340°F (170°C) and peel the apples, remove the core and slice them thinly.

    Add half of the slices to the egg and flour mixture.

  • Butter and flour a 9-inch springform pan and pour in the apple and mascarpone cake, arranging the remaining apple slices on top.

  • Then bake in a preheated oven for at least 35 minutes on the lowest rack of your oven and always do the toothpick test to see if the cake is cooked before removing from the oven.

  • This apple cake remains quite moist inside so the toothpick should come out slightly moist.
