Ingredients for Baked Stuffed Peaches
- 4 yellow peaches
- 1/2 cup sugar
- 3/4 cup fresh heavy cream
- 1/4 cup powdered sugar
- 1 oz dark chocolate
Preparation of Baked Stuffed Peaches
To prepare the baked stuffed peaches, wash the peaches well, then dry them and cut them in half.
To cut them, remove the stem and pass the tip of the knife while rotating the peach so that once you reach halfway, it separates by itself.
Remove the pit and place them in a bowl with the cut side up, sprinkle with half of the sugar and let them rest for 30 minutes.
Preheat the oven to 400°F in static mode and line a baking tray with parchment paper.
Sprinkle the remaining granulated sugar on the parchment paper and position the peaches with the cut side down (in contact with the sugar).
Bake in the middle shelf of the oven and cook the peaches for at least 15 minutes.
Perform the toothpick test on one of them, if they are perfectly cooked, remove them from the oven, otherwise extend the cooking by another 5 minutes.
Remove them from the oven and let them cool for at least 30 minutes, in the meantime whip the fresh cream with the powdered sugar using an electric mixer.
Grate the dark chocolate.
Take some small bowls where one peach can stand slightly open, then pipe some whipped cream peaks at the bottom.
Position 2 halves of peach standing as if to join them, then fill the middle using a spoon or a piping bag.
Sprinkle the top with previously grated chocolate and place in the fridge until it’s time to serve the Baked Stuffed Peaches.
You will see they will be soft and delicious to eat with a spoon.
How to Store Baked Stuffed Peaches
You can store them in the fridge in a container with a lid for 2 days already filled or, without the filling, they keep very well for 3 or 4 days.
