Ingredients to prepare the Baked Protein Bread in Pot
You can replace the spelt and soy flour with 1 cup of whole wheat flour
- 1/2 cup rye flour
- 1/2 cup soy flour
- 1/2 cup oat flour
- 1/2 cup whole spelt flour
- 1 packet baking powder
- 1 tsp sugar
- 2 eggs (medium-large)
- 2 pinches salt
- 2/3 cup plant-based milk (soy or another)
- to taste sesame seeds (or poppy seeds, or even a mix)
- to taste mayonnaise
- 3.5 oz prosciutto crudo
- 1 beefsteak tomato
- to taste arugula
- 1 buffalo mozzarella

Baked Protein Bread in Pot Preparation
To prepare the Baked Protein Bread in Pot, first of all sift together the flours, baking powder, and sugar.
In a bowl, with a hand whisk or a fork, beat the eggs with milk and salt.
Add the flours and mix very well until you have a lump-free batter.
Butter a thick-bottomed pot with a lid, then pour the batter.
Sprinkle with sesame or poppy seeds or a mix of both.
Cover with the lid and on very low heat, bring to cook for 15/18 minutes.
Whether you have a modern microwave with a Crisp plate or a regular microwave with a grill, you can bake the protein bread.
Pour the batter into a 18 cm silicone mold.
With Crisp function, place the mold on the Crisp plate, set the Crisp function, and bake the bread for 6 minutes.
Or in microwave + grill function even without the Crisp plate, place the silicone mold directly on the glass turntable.
Bake for 10 minutes, checking the browning on the surface. If you see it tends to burn, cover it with a circle of parchment paper in the last 4 minutes.
Once the bread is cooked, let it cool, then cut it in half and fill it by spreading the surface with mayonnaise.
Add the sliced tomato, prosciutto, arugula, and close the bread with the other half smeared with mayonnaise.
Let it rest in the refrigerator wrapped in plastic wrap for at least 1 hour before slicing and enjoying.
How to Store Baked Protein Bread in Pot
Once filled, store it in the refrigerator for 2 days, always wrapped in plastic wrap or inside an airtight container.
Without the filling, you can store it in a cake holder or a bag outside the refrigerator for 2 days.
