- 14 oz mantovana pumpkin
- 28 oz sweet potatoes (or yams) (red)
- 4 tbsps extra virgin olive oil
- 2 sprigs rosemary
- 2 pinches salt
- to taste black pepper
- 2 cloves garlic

Preparation of Baked Pumpkin and Sweet Potatoes
Preparing the pumpkin and sweet potatoes is really simple and quick, first peel the sweet potatoes and the pumpkin, and remove its seeds and internal filaments.
Cut the sweet potatoes into slices about 3/4 inch thick and the pumpkin into moderately sized wedges.
Season the vegetables separately with salt, freshly ground black pepper, and extra virgin olive oil.
Preheat the oven to 428°F in static mode, spread the sweet potatoes on a baking tray, add the garlic cloves, and a few sprigs of rosemary.
Bake the sweet potatoes for 15 minutes then remove the tray, turn the sweet potato slices upside down and add the pumpkin wedges
Put back in the oven and bake for another 15/20 minutes checking the degree of cooking and browning.
