BAKED PUMPKIN WITH PISTACHIOS

I know you all love pumpkin, so I thought of you and prepared the baked pumpkin with pistachios, a unique delight.

Pumpkin combined with pistachios, whole garlic cloves, sage, and rosemary is very simple and full of flavor. You can accompany any main course or simply eat it with some good baked ricotta and you’ll see that you’ll be successful even if you have guests over.


The baked pumpkin with pistachios is prepared in no time and is delicious even when just warm, though it’s at its best piping hot straight from the oven.

Ingredients for baked pumpkin with pistachios

  • 1.5 lbs pumpkin (net weight after discarding)
  • 3 cloves garlic
  • 3 sprigs rosemary
  • 2 sprigs sage
  • 3 pinches salt
  • 3 tbsps extra virgin olive oil
  • 1 oz pistachios

Preparation of baked pumpkin with pistachios

  • To prepare the baked pumpkin, we removed the peel, but you can leave it on if you prefer.

  • Then cut the pumpkin into thick slices less than 3/4 inch, remove the seeds and inner fibers.

  • Preheat the oven to 400°F in static mode or 340°F in fan mode, and arrange the pumpkin slices on a baking tray brushed with extra virgin olive oil.

  • Sprinkle the pumpkin with salt, and if you like, you can also add black pepper and half of the coarsely chopped herbs.

  • Add the whole garlic cloves crushed with a knife, the remaining herbs without chopping, and the coarsely chopped pistachios.

  • Drizzle with extra virgin olive oil and bake the pumpkin in the middle rack of the oven for at least 30 minutes.

  • If you want a golden crust, turn on the grill mode of the oven for the last 5 minutes, then serve and..
