Basic Pastry Cream Ingredients
- 3 egg yolks
- 3/4 cup sugar
- 1 1/2 cups milk
- 1/3 cup all-purpose flour
- 1 pod vanilla bean
Basic Pastry Cream Preparation
To prepare the pastry cream, first heat the milk in a saucepan along with the seeds of 1 vanilla bean.
In a bowl, mix the egg yolks at room temperature with the sugar and the flour (you can substitute the flour with an equal amount of cornstarch or potato starch).
When the milk is hot but not yet boiling, add it to the egg mixture, passing it through a strainer to remove the vanilla bean seeds.
Stir well and put it on the stove, using a hand whisk to avoid lumps.
After a couple of minutes, the pastry cream will be ready, creamy and smooth.
Let it cool by covering it with plastic wrap in contact, and then place it in the refrigerator if you do not intend to use it immediately.
To cook the pastry cream in the microwave, heat the milk at maximum power for 1 minute and slightly more.
Mix the egg yolks with the sugar, then add the flour and incorporate it well.
Add the very hot milk and use a hand whisk to mix everything together.
Place in the microwave in a suitable container without covering for 2 minutes at maximum power, take it out, stir well, and cook for another minute.
Remove the pastry cream from the microwave, cover it in contact with plastic wrap, and let it cool completely before storing it in the refrigerator.

How to Store Basic Pastry Cream
You can store it in the refrigerator for 2 or 3 days well covered with plastic wrap and before using, remember to stir it with a hand whisk or rubber spatula.
