Preparation of Beneventan Tart with Shortcrust Pastry
First, prepare the shortcrust pastry, then in a bowl add the flour, powdered sugar, salt, and lemon zest.
Make the classic hole in the center and add the well-chilled butter cut into cubes.
Quickly knead with your fingertips until you have a sandy mixture.
Add the egg yolks and quickly incorporate them until you have a smooth and compact dough, cover it with plastic wrap and let it rest in the refrigerator for at least 40 minutes.
Meanwhile, prepare the filling, so in a small pot, heat the milk without bringing it to a boil, then remove it from the heat.
Add the liqueur, sugar, and lemon zest and stir until it cools slightly.
Once at room temperature, add the eggs and incorporate them with the help of a hand whisk.
Set aside.
Roll out the shortcrust pastry dough to a thickness of about 1/8 inch with a rolling pin.
Line a 9.5-inch diameter mold with the pastry, removing the excess, and prick the bottom with a fork.
Place the ladyfingers in a herringbone pattern to cover all the pastry, pour the cream gently and let it rest for 10 minutes.
In this way, the ladyfingers will absorb part of the cream, meanwhile preheat the static oven to 340°F.
Bake the Beneventan tart in the center rack of the oven and cook for at least 40/45 minutes.
Take it out of the oven, let it cool at room temperature, then place it in the refrigerator for a couple of hours to blend the flavors.
How to store the Beneventan Tart with Shortcrust Pastry
You can store it in the refrigerator for 3 days, well sealed in an airtight container.
If you prefer, you can also freeze it and then let it thaw at room temperature.
