I love braised veal ossobuco in white sauce; it’s an extremely easy recipe with a few ingredients that you can serve with mashed potatoes, boiled potatoes or with the classic Milanese risotto to make a sort of ossobuco alla Milanese. We opted for the white version because I am allergic to tomato so I couldn’t make it with tomatoes, but I will tell you everyone at the table enjoyed it. Get some nice small veal ossobuco and you’ll see how delicious it is.

Ingredients for the ossobuco in white
- 2.2 lbs veal ossobuco
- 2 yellow onions (small)
- 2 cloves garlic
- 1/2 cup dry white wine
- 4 tbsp extra virgin olive oil
- 1 cup beef broth
- 1 tbsp lemon zest (grated)
- 2 pinches salt
- 1/2 cup all-purpose flour

How to prepare ossobuco in white
Prepare the ossobuco in white starting with the ossobuco: with a sharp knife cut the membranes around them, pass them in the flour and shake off the excess.
Roughly slice the onion and sauté it in the pan with the extra virgin olive oil.
When it begins to become translucent add the ossobuco and brown them on all sides over high heat.
Moisten with the wine and let it evaporate, then cook the ossobuco in white by lowering the heat and covering with a lid.
After 15 minutes add the hot broth, season with salt and the grated lemon zest and continue cooking for at least another 35–40 minutes.

Ossobuco in white keeps in the refrigerator for 2 days if stored in an airtight container.
