  • 1.3 lbs broccoli
  • 4 eggs
  • 1 leek
  • 2 pinches salt
  • 2 pinches pepper
  • 1 tsp parsley
  • 3 tbsps extra virgin olive oil

Preparation of Broccoli with Eggs and Leeks

  • Start preparing broccoli with eggs and leeks by cleaning the broccoli; separate the florets and quickly wash them.

  • Steam them or microwave for a few minutes; steaming will take 5 minutes, and the microwave 3 minutes.

  • Steaming vegetables keeps their nutrients intact, which is why I always prefer this method.

  • Meanwhile, thinly slice the leek and sauté it with extra virgin olive oil in a large pan.

  • Once the broccoli is ready, just cooked but still very al dente, add them to the pan with the leek, salt and pepper, and stir to flavor.

  • Cover with a lid and cook over low heat for at least 8 minutes, stirring occasionally.
