Brown Rice with Carrots

This healthy and tasty dish of brown rice with carrots is one of those dishes I prepare when I’m hungry and want something different from the usual risotto.

Tasty and easy to make, brown rice with carrots is also liked by children, my nieces eat it very willingly, especially because it doesn’t have meat, just a bit of stracchino to make it creamy and voilà.

You can add your preferred seasonal vegetables, we used bell pepper because we like the slightly sweet flavor it gives the dish, but if it’s the season you can add, for example, some kale which will surely go very well.

Ingredients for Brown Rice with Carrots

  • 10.5 oz brown rice
  • 3 carrots
  • 1 onion
  • 1 red bell pepper
  • 2 qt vegetable broth
  • 1 glass dry white wine
  • 3 tbsps extra virgin olive oil
  • 2.1 oz stracchino
  • to taste salt

Preparation of Brown Rice with Carrots

  • To prepare brown rice with carrots, start by boiling some vegetable broth, if you want to make it with my recipe HERE IT IS, otherwise prepare your recipe.
    Meanwhile, chop the onion, carrots, and bell pepper into rather small pieces.

  • In a pot wider than it is tall, put the extra virgin olive oil and sauté the vegetables for a few minutes, stirring often so they don’t brown too much, the onion should become translucent, then add the rice.

  • With a wooden spoon, stir to flavor and toast the rice. If your broth is unsalted, add a pinch of salt, deglaze with the white wine and let it evaporate on high heat.

  • Once the wine has evaporated, start adding 2 or 3 ladles of hot broth at a time, keeping in mind that brown rice needs more time to cook than risotto rice, so adjust the timing accordingly. I usually add the broth in 3 rounds to avoid standing by the stove the entire time.

  • When the rice is almost cooked, add a little broth at a time, once it’s cooked, turn off the heat, add the stracchino using a teaspoon, and stir vigorously to cream everything together.

  • Taste for flavor, add salt if needed, chop some basil leaves to add aroma, let it rest for 5 minutes and serve your brown rice with carrots and..

Notes

Brown rice with carrots is best eaten immediately; otherwise, you can store it in a closed container in the fridge for up to two days.
