The Bud Spencer-style beans and sausages, a dish very similar to “fagioli all’uccelletto”, hearty and full of flavor, is for us a perfect comfort food in the best western style, made even more famous by the film “They Called Him Trinity” where Bud Spencer ate an entire pot of sausages and beans after a 24-hour fast.
This dish is easy to make and, if served with good country bread, can be a complete meal — a flavorful dish ideal for cold winter evenings when we need not only calories but also a little inner coziness. Ingredients — Bud Spencer-style Beans and Sausages
- 18 oz Sausage
- 1 cup Dried borlotti beans (I used 400 g of the fresh ones (~14 oz))
- Half Onion
- 4 tbsp Extra virgin olive oil
- 2 Hot chili peppers
- Half glass Red wine (~100 ml (~3.4 fl oz))
- 1 1/4 cups Tomato passata
- to taste Salt
- 3 pinches Black pepper
- to taste Rosemary
Preparation — Bud Spencer-style Beans and Sausages
To prepare the Bud Spencer-style beans and sausages, if you use dried beans you must first soak them the evening before, then drain and boil them in plenty of unsalted water until cooked but still al dente.
I used the fresh ones that I froze over the summer, so I just cooked them in plenty of water with 2 bay leaves for 20 minutes.
Then finely chop the onion and sauté it in a large pot with the extra virgin olive oil for 3–4 minutes, add the sausages and cook them for 10 minutes, turning often so they don’t stick to the bottom. Deglaze with the wine and let it evaporate.
Now add a few sprigs of rosemary, the tomato passata, and the chopped chili pepper; salt and pepper, and continue cooking for another 10 minutes.
Then add the previously cooked beans, and if the sauce has reduced too much add a few ladles of hot water.
Bring everything to the finish for another 15–20 minutes, turn off the heat and let the Bud Spencer-style beans and sausages rest for a few minutes to let the flavors settle before serving and…

Variations
You can omit the chili pepper and add some sage leaves to the tomato sauce if you like.
