Bulgur and Quinoa with Smoked Salmon Salad

We usually buy a pre-mixed package of Bulgur and quinoa, but I’ll give you the measurements to prepare it starting from 2 separate packages so you can adjust accordingly.

A main dish full of flavor and beneficial properties for our body that you can also eat hot if you want, but at room temperature it really gives its best, especially with the presence of smoked salmon.

Ingredients for the Bulgur and Quinoa Salad with Salmon

  • 2/3 cup bulgur
  • 1/4 cup quinoa
  • 2 oz smoked salmon
  • 1 tomato (beefsteak)
  • to taste sesame seeds
  • 2 tsps extra virgin olive oil
  • 2 pinches salt
  • to taste black pepper
  • 1 tsp chopped parsley

Preparation of Bulgur and Quinoa Salad with Salmon

  • Prepare the Bulgur and quinoa with salmon by first rinsing the bulgur and quinoa well. As I mentioned in the introduction, you can buy the pre-made mix available on the market.

  • Next, place a pot with enough cold water on the stove to cook everything, add a little salt, and bring to a boil.

    Once boiling, add the bulgur and quinoa together and cook for the time indicated on the package (usually 10 minutes) over low heat.

  • Meanwhile, shred the smoked salmon and cut the tomato into small pieces.

  • Once the Bulgur and quinoa are ready, drain them and cool under cold water.

  • Now place them in a large salad bowl, add the previously shredded salmon and then the chopped tomato.

  • Add salt, pepper, and extra virgin olive oil, also adding the sesame seeds, and mix the Bulgur and quinoa salad with salmon.

  • Sprinkle with some fresh chopped parsley and serve.
