- 12 chicken wings
- 10 oz buttermilk
- 3/4 cup all-purpose flour
- 3/4 cup semolina flour
- 2 tsp salt
- 1 tsp sweet paprika (or hot)
- to taste black pepper
- 11 oz peanut oil

Preparation of Buttermilk Fried Chicken Wings
To prepare buttermilk fried chicken wings, first make the buttermilk. Then clean the chicken wings and place them in a zip-lock bag with the buttermilk and let them marinate preferably overnight.
Now that the chicken wings are well marinated, mix the two flours and spices together with the salt and pepper in a bowl.
Drain the chicken wings from the marinade and pat them dry with paper towels. Coat them one by one in the flour mixture, pressing well to ensure the coating adheres evenly.
Let them rest for 30 minutes.
Heat the oil to 356°F, make the toothpick test by inserting it into the oil; when you see small bubbles, it is ready
Fry the buttermilk fried chicken wings until golden brown, draining on kitchen paper.
Place the wings on a baking tray and bake in a hot oven at 446°F for at least 20 minutes, then remove from the oven and let rest for 5 minutes before serving!!
