What you need to prepare caramelized Tropea onions
- 2.2 lbs Tropea red onions
- 4 tablespoons brown sugar
- 1/4 cup red wine
- 3 tablespoons extra virgin olive oil
- 3 pinches salt
- 2 pinches black pepper
- 3 juniper berries
- 1 clove
- 1 teaspoon rosemary

How to prepare caramelized Tropea onions
Start making the caramelized Tropea onions by peeling and cutting the onions into wedges.
In a large pan, heat the extra virgin olive oil and add the onions, season them with salt and let them wilt for at least 5 minutes without stirring too much to avoid breaking them.
Sprinkle the sugar over the onions and stir to dissolve it, pour in the wine and let it evaporate over high heat.
When you no longer smell alcohol, season the onions with ground pepper, spices, and rosemary needles.
Lower the heat, cover with the lid and cook the caramelized Tropea onions for at least 15 minutes, stirring halfway through cooking.
When the onions are tender, remove the lid to dry the cooking juices being careful not to burn the onions or let them break up too much.
Serve the Tropea onions once cooled or at room temperature.
