Carnival Stuffed Cookies

The Carnival cookies stuffed with jam and decorated with colorful sprinkles or jimmies are perfect for Carnival and beyond.

Try to imagine the snacks for children at school or your coffee break at the office, they will be perfect and once baked and cooled they can be stored in a simple tin box for 1 week.

You can also use smarties for an even more attractive visual effect and if you want, you can also make them with cocoa.

I usually make a lot when our nephews come to visit so they can take a good amount home.

Ingredients for Carnival Stuffed Cookies

  • 2 1/4 cups all-purpose flour
  • 5.25 oz butter (cold from fridge)
  • 2/3 cup powdered sugar
  • 2 eggs (medium)
  • Half package baking powder
  • 1 oz powdered sugar
  • to taste jam (of choice)
  • to taste colorful jimmies

Preparation of Carnival Stuffed Cookies

  • Sift the flour with the baking powder and place it in a large bowl.

  • Add the cold butter from the fridge cut into pieces, work it with your fingertips until you have a sandy mixture.

  • Add the powdered sugar and incorporate it by working with your hands.

  • Incorporate one egg at a time making it absorb, if necessary help yourself with a spatula.

  • Turn the mixture onto the work surface and work it until you form a smooth and compact ball.

    Wrap it in plastic wrap and let it rest for at least 30 minutes.

  • Then roll out with a rolling pin into a thin sheet 0.16 inches and with cookie cutters cut out discs.

  • On half of them make a hole in the center with another star-shaped cutter or whatever you prefer.

  • Sprinkle the discs without a hole with powdered sugar, those with a hole brush with a little milk and sprinkle with colorful sprinkles.

  • Preheat the oven to 356°F in static mode, line a baking tray with parchment paper and arrange the cookies spaced apart.

  • Bake them in the central rack of the oven for 12 minutes, keep in mind they should not brown.

  • Once baked and cooled stuff them with jam and close them 2 by 2, store them in a tin box.

Variants and Tips for Carnival Stuffed Cookies

Cocoa Dough: Replace 30g of flour with unsweetened cocoa powder. The combination of cocoa cookie, apricot jam, and colorful sprinkles is visually stunning!

Citrus Aroma: Grate some orange or lemon zest directly into the shortcrust dough for a typical Carnival dessert scent.

Royal Icing: Instead of adding sprinkles before baking, bake the cookies “naked.” Once cool, decorate them with a quick icing (powdered sugar and very little water) and then add the colorful sprinkles: they will be much brighter!

Storage:

Beware of Humidity: Since your cookies have jam, they tend to absorb moisture from the filling. They keep well in a tightly closed box for about 4-5 days.

The Apple Trick: If they seem too hard after a few days, place a slice of apple in the box (without it touching the cookies). The apple’s moisture will make them slightly softer again.

Freezing: You can freeze the cookies raw already filled. When you crave something sweet, just bake them directly from frozen, adding only a couple of minutes to the expected baking time.
