A simple, light, and very tasty side dish that, thanks to its sweet flavor, even children like it. A vegetable truly worth enhancing.

Ingredients for preparing celery with Parmesan
- 1.76 lbs celery
- 2.11 oz grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 0.71 oz butter
- 2 pinches salt
- to taste black pepper
Preparation of celery with Parmesan
To prepare celery with Parmesan, first clean the celery well, remove the leaves and the terminal part of the stalk but keep the leaves for other preparations.
Remove the fibrous strands from the celery stalks using a peeler and then cut it into not too large chunks.
Place a pot filled with slightly salted water on the stove and, when it boils, add the celery and let it cook for 8/10 minutes depending on how large your pieces are.
In a large pan with high edges, melt the butter together with the extra virgin olive oil, then drain the celery and let it flavor in the pan, salting it lightly.
If you like it crunchy, you can sauté it for just a few minutes, but if you want it really tender, sauté it in the pan over medium heat for another 6/7 minutes.
When cooking is complete, turn off the heat, sprinkle with grated cheese, and cover the pan, letting the celery with Parmesan rest for a few minutes until the cheese melts.
Plate it up, sprinkle with freshly ground black pepper, and serve hot or warm.

If you wish, you can add a few minutes before the end of cooking some whole or halved Taggiasca olives to your celery with Parmesan to give it an extra flavor boost.
Or add some aromatic herbs like thyme and oregano just before adding the grated cheese.
Another variant could be to cook the celery with Parmesan in the oven. In this case, once drained from the water, place it in an ovenproof dish, sprinkle with grated cheese, and bake for 15 minutes.
