I make chard and meat rolls when I don’t have cabbage at home. They are great with this usually underrated vegetable, the chard is easy to use and allows us to bring to the table little treasures that contain a rich filling and why not different each time, today with minced meat but sometimes also with vegetables and rice. Ingredients for Chard and Meat Rolls

  • 12 leaves chard
  • 8.8 oz mixed minced meat
  • 2.8 oz mortadella
  • 1 egg
  • to taste breadcrumbs
  • 6 tablespoons grated Grana Padano cheese
  • to taste salt
  • to taste extra virgin olive oil
  • 7 oz tomato sauce
  • 3.5 oz mixed minced meat
  • 1 clove garlic
  • to taste salt
  • to taste extra virgin olive oil

Preparation of Chard and Meat Rolls

  • To prepare the chard rolls, start by removing the largest leaves from your chard, cut the white part from the stem and blanch them after washing in slightly salted boiling water for 2 minutes.


    Drain them with a slotted spoon and dry them on a clean tea towel.

  • Meanwhile, prepare the sauce, put the garlic clove in a pan with a drizzle of extra virgin olive oil and let it fry. Add the minced meat and stir to flavor, then add the tomato sauce, a few tablespoons of water, salt, and let the sauce thicken for 10 minutes.

  • In a large bowl, mix the mixed minced meat together with the mortadella finely chopped with a knife, add the egg, slightly salt, add the grated cheese and mix everything well. If it seems too liquid, add a few tablespoons of breadcrumbs but do not overdo it.

  • Preheat the oven to 392°F, take a baking dish and cover the base with a few tablespoons of the freshly made sauce.


    Form your rolls by placing a generous tablespoon of filling in the center of each chard leaf, then close like a roll by folding the side edges first and then wrapping everything.

  • Place each roll with the closure facing down in the baking dish, cover with plenty of tomato and meat sauce, and bake in a hot oven for 20/25 minutes.
