Ingredients for Cheesy Potato Croquettes in Air Fryer

  • 2.2 lbs potatoes
  • 7 oz pecorino (or parmesan)
  • 3.5 oz asiago (or latteria or caciotta)
  • 2 pinches salt
  • to taste thyme
  • 1 pinch black pepper
  • 2 eggs (large)
  • to taste breadcrumbs

  • 1 Air Fryer
  • 1 Bowl
  • 1 Grater

Steps

  • Wash the potatoes without peeling them, then cook them in plenty of unsalted water until they are soft.

    You can also cook them in the microwave by placing the potatoes in a bowl with a little water, cover with plastic wrap, and microwave at 750 watts for 8 minutes (if the potatoes are small) until ready.

  • Let them cool slightly, then peel them, mash them with the potato masher, collecting them in a bowl.

  • Salt, pepper, and season with dried thyme, add the pecorino and mix well to combine.

  • With wet hands, take a handful of potato mixture, shape it into a ball, then flatten it on your palm.

  • Place a strip of cheese in the center and close the croquette, shaping it into a log.

  • Once you have formed all the croquettes, beat the eggs in a shallow dish and place some breadcrumbs in another dish.

  • Then roll the croquettes first in the beaten eggs and then in the breadcrumbs, pressing lightly to adhere well.

  • Preheat the air fryer to 392°F, place the potato croquettes in the fryer basket and cook them for 8-10 minutes.

  • Remove the basket, carefully turn them over, and cook for another 5-7 minutes, depending on the desired browning level.

  • If you don’t have an air fryer, you can cook them in a traditional oven, place them on a baking tray lined with parchment paper, preheat the oven to 428°F in static mode, and bake in the middle rack for 30 minutes.

Tips and Variations for Cheesy Potato Croquettes in Air Fryer

You can fry the potato croquettes in plenty of sunflower oil, inserting a few at a time and turning them when they are golden on one side, drain with a slotted spoon, and let them lose excess oil on absorbent paper.

If you want an even crunchier crust, you can pass the cheesy potato croquettes in the air fryer again in beaten eggs and breadcrumbs, making the classic double breading.
