Chicken and Avocado Salad with Cucumbers

With the heat, we know, the desire to be at the stove is really low, so if we can recycle some ingredients perhaps cooked in the previous days, we do it gladly. This Chicken and Avocado Salad with Cucumbers is perfect.

If you don’t have leftover chicken from another preparation, you just need to grill some chicken slices for a few minutes per side, perhaps a bit thick, to then assemble everything.

Ingredients for the Chicken and Avocado Salad with Cucumbers

  • 1.1 lbs chicken breast (thick slices)
  • 1 avocado (well ripe)
  • 2 cucumbers
  • 3.5 oz grape tomatoes (or cherry tomatoes)
  • 8.8 oz lettuce
  • 2 pinches salt
  • 4.4 oz Greek yogurt 0% fat
  • Half clove garlic
  • 2 pinches salt
  • 1 tbsp chopped parsley
  • 3 tbsps extra virgin olive oil
  • 1 tbsp lemon juice

Preparation of Chicken and Avocado Salad with Cucumbers

  • To prepare the Chicken Salad with cucumbers, first, if you don’t have leftover chicken, cook the chicken slices on the grill.

    Just 3 minutes per side will be enough, then let them cool and salt them.

  • If instead, you have leftover chicken from another preparation, shred it or cut it first into slices and then into bite-sized pieces.

  • Wash the lettuce and dry it, then tear it roughly with your hands and place it at the bottom of a serving platter.

  • Peel the cucumbers and cut them into thin slices, then arrange them on top of the lettuce on one side.

  • Peel and thinly slice the avocado, then salt it, dress it with lemon juice (so it doesn’t darken), and place it on the opposite side of the cucumbers.

  • Arrange the chicken pieces in between the cucumbers and avocado and distribute the tomatoes on top after washing, drying, and halving them.

  • Now prepare the sauce to dress the Chicken and Avocado Salad with Cucumbers by mixing the Greek yogurt with extra virgin olive oil, salt, and lemon juice.

  • Crush the garlic clove and chop the parsley, mixing it with the yogurt.

    Once all the ingredients are well combined, dress the Chicken Salad by drizzling the prepared sauce over it.

  • Serve it at room temperature or cold from the refrigerator.
