Chicken Bites with Vegetables

What you need to prepare chicken bites with vegetables

  • 14 oz chicken breast
  • 1.54 lbs cauliflower
  • 2 potatoes
  • 2 red bell peppers
  • 2 Tropea red onions
  • 3 carrots
  • 3 tbsps extra virgin olive oil
  • 3 pinches salt
  • 2 pinches black pepper
  • 2 tsps dried oregano
  • 1 glass dry white wine

  • Parchment paper
  • 1 Bowl (large)
  • 1 Slotted spoon

How to prepare chicken bites with vegetables

  • Prepare the chicken bites with vegetables starting with the chicken breast, remove the bone, and cut the chicken breast into slices 0.79 inches thick and then into chunks.

  • Place it in a bowl that can also hold the vegetables, then detach the florets from the cauliflower and add them to the bowl with the chicken.

  • Clean all the other vegetables and cut them into large chunks, then roughly slice the onions.

  • Mix the vegetables with the chicken, then season with salt, pepper, oregano, and extra virgin olive oil, making sure it reaches everywhere.

    Add the wine as well, cover the bowl, and let it marinate for at least 1 hour.

  • Line a baking tray with parchment paper, preheat the oven to 392°F, and pour vegetables and chicken into the tray with all the marinade.

  • Cook the chicken bites with vegetables for at least 20 minutes, then turn all the vegetables with a slotted spoon and finish cooking for another 15 minutes.

  • If you want everything well browned on the surface, turn on the oven grill for the last 5 minutes.
