Ingredients for preparing the Chicken Roll Wrapped

  • 1.3 lbs chicken breast (whole or sliced)
  • 3 potatoes (medium)
  • 5.3 oz smoked bacon (or speck or fresh bacon of choice)
  • 1 cup grated Parmesan cheese
  • 1 egg yolk
  • 2 pinches salt
  • 1 sprig thyme (or oregano)
  • 1 tsp lemon zest

Preparation of Chicken Roll Wrapped

  • To prepare the Chicken Roll Wrapped, first cook the potatoes and mash them with a potato masher.
    We cooked them in the microwave (so they don’t absorb water).

  • Then open the chicken breast like a book, cover it with cling film or parchment paper and flatten it with a meat mallet to make it thinner.

  • Add an egg yolk to the mashed potatoes, salt, season with grated lemon zest, thyme or oregano.
    Finally, incorporate the grated cheese and work with a fork to mix everything together.

  • Spread the mashed potatoes over the chicken, pressing lightly without pushing it to the edges.

  • Roll up the Chicken Roll Wrapped using the parchment paper underneath, applying light pressure.

  • Then wrap it in aluminum foil, closing the ends like a candy, and place it on a baking tray.

  • Bake the chicken roll with bacon in a preheated oven at 374°F in static mode for at least 40 minutes.

  • Once cooked, take it out of the oven, remove the foil and parchment paper, and let it rest for a few minutes before slicing it into thick pieces and serving it on a bed of green salad.

  • If you want a golden and crispy chicken roll on the outside, once 30 minutes of cooking have passed, remove the foil and parchment paper and turn on the grill for the last 10 minutes.

    Move the baking tray to the top rack of the oven.
