I used brisket that I cooked together with the chickpeas, and the result was truly astonishing, finger-licking good and perfect for soaking up the sauce with bread.
A dish with a slightly long cooking time but nothing major, truly simple to prepare, you just need a pot with a thick bottom or even better a terracotta one to prevent sticking to the bottom.

Ingredients for Chickpeas with Rustic Sauce
- 7 oz dried chickpeas
- 10.5 oz beef (brisket)
- 1 onion
- 1 carrot
- 1 stalk celery
- 14 oz tomato puree
- 2 pinches salt
- 2 pinches black pepper
- 1 tbsp parsley
- 3 tbsp extra virgin olive oil

Preparation of Chickpeas with Rustic Sauce
Prepare the chickpeas with rustic sauce by soaking the chickpeas the night before in plenty of cold water.
Among the ingredients, I’ve suggested the chickpeas we use at home, they are really good, hold up well during cooking, and don’t break easily.
The next morning, drain and rinse them very well.
In a terracotta pot or a pot with a thick bottom, sauté the coarsely chopped vegetables in extra virgin olive oil until they become almost transparent.
Add the tomato puree, a glass of water, and let it cook for 10 minutes.
In the meantime, remove the bone from the brisket and cut it into pieces of about 3/4 inch.
Add the chickpeas and the meat to the pot, ensuring it is well covered with the sauce, bring to a boil, reduce the heat, cover with the lid, and let it cook for at least 1 hour.
Check occasionally and stir, adding a few ladles of hot water if needed to prevent sticking.
When everything is cooked, remove the lid, increase the heat, and if the sauce is too liquid, allow it to thicken.
Serve with some good bread for dipping!

Storing Chickpeas with Rustic Meat Sauce
The chickpeas with rustic meat sauce can be stored in the refrigerator for 2 days in an airtight container.
You can freeze the chickpeas with sauce and then let them thaw at room temperature before reheating, even in the microwave oven.
Variations
If you have leftover boiled or roasted meat, you can use it by cutting it into pieces and adding it to the pot halfway through cooking.
