So, when you open a can of chickpeas, DO NOT throw away the liquid from the chickpeas. Save it in an airtight jar in the refrigerator and use it later to make this Mousse with Aquafaba. You’ll see how delicious it is.
The most important thing is that the aquafaba must be cold from the refrigerator so it whips perfectly and you’ll have a delicate mousse on the palate, not overly sweet, and it doesn’t taste like chickpeas at all, trust me.

Ingredients for Chocolate Mousse with Aquafaba
- 0.55 cup aquafaba
- 2.82 oz 75% dark chocolate
- 1 tablespoon powdered sugar

Preparation of Chocolate Mousse with Aquafaba
To prepare the aquafaba chocolate mousse, first cut the dark chocolate into pieces.
Choose a high-quality one to get the best result.
Then melt it in a bain-marie or in the microwave until it becomes creamy but still thick without lumps.
In the meantime, place the aquafaba, which must be cold from the fridge, in a bowl and whip it with electric whisks for at least 10/12 minutes.
If you want, you can add a little powdered sugar, although I didn’t use it because I like the pure dark chocolate flavor.
When you have achieved a consistency similar to whipped egg whites, start adding the melted chocolate slowly while the whisks are running.
When the chocolate aquafaba mousse is nice and creamy, put it in the refrigerator to rest for at least 2 hours.
You will have obtained an Aquafaba Mousse that you can enrich in individual cups by adding crumbled cookies or nuts to taste.
