Chocolate Pudding Cake

The chocolate pudding cake I made a few days ago for the kids’ snack really surprised everyone. They wanted a chocolate cake and I had homemade chocolate pudding in the fridge from the day before, so I thought to add it to the batter. The result? A truly indulgent snack cake, soft and creamy, to be eaten with a spoon and very chocolatey. Try it and you’ll see how much everyone will love it.

Ingredients for the chocolate pudding cake

  • 5/8 cup chocolate pudding
  • 3 eggs
  • 1/2 cup sugar
  • 6 tbsp butter
  • 1 1/4 cups all-purpose flour
  • 6 tbsp cornstarch (maizena)
  • 1 packet baking powder
  • to taste dark chocolate (grated)

Preparation: chocolate pudding cake

  • To prepare the chocolate pudding cake, first make the chocolate pudding following my recipe HERE and let it cool.

  • Now beat the eggs with the sugar using an electric mixer until the mixture is frothy and almost white.
    Sift the flour together with the cornstarch and the baking powder.

  • Melt the butter in a double boiler, then begin adding the sifted dry ingredients and the butter in several additions while continuing to beat with the mixer.

  • Meanwhile preheat the oven to 356°F and fold the now-cooled pudding into the batter for the chocolate pudding cake using a rubber spatula with gentle upward motions.

  • Now butter and flour a 9.5-inch pan then pour in the batter for the chocolate pudding cake and bake on the middle rack for at least 40 minutes.

  • The cake will not be dry like a normal cake but rather moist like a dense pudding that you can still eat with a spoon, while keeping the ingredients of a cake. Once the baking time is up, remove from the oven.
    Grate some dark chocolate over the surface — the heat from the cake will melt it — and let it cool in the pan.

  • Once cool you can unmold it, dust with powdered sugar which will be absorbed by the cake’s moisture and..

Storage: chocolate pudding cake

The chocolate pudding cake should be stored in the refrigerator, preferably in an airtight container, for up to 2 days. You can freeze the chocolate pudding cake and thaw it at room temperature before eating.
