This roll is ideal to glaze with the very light chocolate glaze and if you want, you can add sugar sprinkles, either the normal ones or colored ones. Thinking about Carnival, the colored ones should be used, right? But since we made it to end an evening sweetly without thinking about Carnival, we used the white ones so it’s up to you to choose.

Ingredients for the Chocolate Roll with Paradise Cream
- 3 eggs (large)
- 1/2 cup sugar
- 2/3 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 3 1/3 tbsp sunflower oil
- 3/4 cup heavy cream
- 7 oz mascarpone
- 1/4 cup sugar
- 1 tbsp honey
- 2/3 cup cocoa glaze
- to taste white sugar sprinkles

How to Prepare the Chocolate Roll with Paradise Cream
First, prepare the chocolate roll by beating the eggs with the sugar until you get a very frothy and almost white mixture.
Incorporate the oil while keeping the electric whisks running.
Sift the flour with the cocoa together and add it to the eggs little by little, using a spatula with gentle movements from bottom to top.
Preheat the oven to 350°F, line a baking pan with parchment paper, pour the mixture, level it with a spatula, and bake for 10/12 minutes.
Meanwhile, prepare the paradise cream, placing all the ingredients in a bowl and whisking them with the electric whisk until you have a smooth and well-mixed cream.
Place in the refrigerator until ready to use.

Once the chocolate roll is cooked, remove from the oven, immediately remove the parchment paper, and using a new sheet, roll it up again, cover with a kitchen towel and let it cool.
Once cooled, fill the chocolate roll with paradise cream using the paradise cream prepared earlier.

How to Store the Chocolate Roll with Paradise Cream
You can store the chocolate roll in an airtight container for 3 days in the refrigerator.
Alternatively, you can freeze the roll and let it thaw at room temperature 1 hour before consuming.
