The holidays are approaching and we all ask the same question, what to give to friends and family? The Christmas Cookie Box is the solution.

Lots of Christmas cookies, with all the imaginable shapes and our favorite shortcrust pastry, and you’ll see that you’ll make a great impression. Then you just need to buy a nice box, a few pieces of colored paper inside, maybe even some ribbons, and voilà, our personalized gift will be ready.

Cookies, as you know, are very popular during this time, they are prepared very quickly, and we can also involve the children in preparing them. You’ll see how much fun they will have.

If you prefer not to make the classic shortcrust pastry, you can use olive oil pastry, cocoa, or even almond, or make half of each, as we did, half classic shortcrust and the other half cocoa.

Ingredients for the Christmas Cookie Box

  • 2 3/4 cups all-purpose flour
  • 1 egg (large)
  • 5 1/4 oz butter (cold from refrigerator)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract (or orange or lemon or cinnamon)
  • 1 pinch salt

How to Prepare the Christmas Cookie Box

  • First, focus on the classic shortcrust pastry, so in a bowl, place the cold butter cut into pieces together with the flour.

    With your fingertips, work everything until you have a rather sandy mixture.

  • Add the powdered sugar and the chosen flavorings, then incorporate them with a rubber spatula.

    Lastly, incorporate the egg and the salt and mix quickly.

  • If you intend to make half cocoa cookies, divide the dough now, turn out the classic one onto the work surface, and work it quickly to form a smooth and compact ball.

    Wrap it in plastic wrap and let it rest in the refrigerator for at least 2 hours.

  • To the dough remaining in the bowl, add 2 tablespoons of unsweetened cocoa and 1 tablespoon of milk, then mix quickly.

    Turn it out onto the work surface, form a compact ball, wrap it in plastic wrap, and let it rest in the refrigerator.

  • After the resting time, take the shortbread doughs out of the fridge, roll each one out to a thickness of 1/4 inch between 2 sheets of parchment paper.

  • Meanwhile, preheat the oven to 340°F in static mode, then cut the cookies with the cutters.

    Combine the scraps and cut out more cookies, place them with the parchment paper underneath on a baking sheet.

  • Bake the Christmas cookies on the middle shelf of the oven for 12/15 minutes, checking occasionally because they should not become too colored.

  • Remove them from the oven and let them cool before removing them from the parchment paper. At this point, you can decorate them with royal icing, melted dark chocolate, or glossy cocoa glaze.

  • If you prefer, you can decorate some cookies before baking with colored sprinkles or edible glitter.

Storage, tips, and variations

The cookies 🍪 can be stored in a tin box for a long time.

Do not overbake them, bake them 2 minutes less instead, as they dry as they cool.

You can make them with almond shortcrust, cocoa, or extra virgin olive oil pastry.
