A light and very simple dish that often seems obvious but is always loved by everyone, especially children, I can assure you as I prepare it every time for my nieces, and if I don’t make it, they ask for it because being simple, they really like it.

Ingredients for cold pasta with tomatoes and mozzarella
- 11 oz short pasta
- 1 1/4 cups tomatoes
- 9 oz mozzarella
- 2 pinches salt
- 1 tsp dried oregano
- 4 leaves basil
- 3 tbsps extra virgin olive oil
Preparation of cold pasta with tomatoes and mozzarella
Preparing cold pasta is simple and quick but requires a few tips to achieve a well-balanced and non-watery dish.
First, bring slightly salted water to a boil to cook the pasta.
Wash and cut the tomatoes into not too large pieces and let them drain sprinkled with salt in a colander.
This way they won’t release water into the dish.
Cut the mozzarella into pieces and let it drain from its whey.
Halve or slice the pitted olives as you prefer.
Once the pasta is cooked but still al dente, drain it and cool it immediately under cold running water to stop the cooking.
Or drain it in a salad bowl and dress it immediately with extra virgin olive oil, mix, and let it cool.
Add the olives, mozzarella, and the now drained tomato (if you wish, you can dry it with kitchen paper).
Season with a little salt, plenty of dried oregano, and the basil leaves broken with your hands.
Let the cold pasta rest for at least 20 minutes before enjoying it.
How to store cold pasta
Cold pasta can be stored in the refrigerator for 1 day provided you have properly dried both the mozzarella and tomatoes, otherwise they will make the pasta too wet.
