Cold Rice with Tomatoes and Pesto

The cold rice with tomatoes and pesto, prepared in airtight jars, is ideal to take to the beach or on a picnic, an easy and tasty recipe that refreshes a day in the sun, few ingredients, and lots of flavor, try it!!

Ingredients for cold rice with tomatoes and pesto

  • 1 1/4 cups Basmati Rice (or rice for salads)
  • 1/4 cup Zucchini Pesto ((my recipe))
  • 5.3 oz Cherry Tomatoes
  • 3.5 oz Latteria Cheese
  • to taste Salt
  • to taste Extra Virgin Olive Oil

Preparation of cold rice with tomatoes and pesto

  • To prepare the cold rice with tomatoes and pesto, first make the pesto following my recipe HERE, Or you can use a recipe you like, you can also add Genovese pesto, but it will be more flavorful, your choice, once the pesto is ready set it aside.

  • Cook the rice for the time indicated on the package, better to cook it a few minutes less. While the rice cooks in plenty of salted water, you can work on the tomatoes, wash them, chop them into small pieces removing their water and seeds.

  • Place them in a bowl, then chop the cheese into small pieces and mix with the tomatoes. When the rice is cooked, quickly drain it under cold running water to stop the cooking, shake off the excess water, and add it to the bowl with the tomatoes.

  • Lightly salt everything and mix well, adding just a drizzle of extra virgin olive oil, then add the set aside pesto. Mix very well, check the flavor of your cold rice with tomatoes and pesto and proceed to put it in airtight jars ready to be transported in the cooler bag. If you like, you can also add a few basil leaves which also give a fresh aroma to everything and.. HAVE A NICE BEACH DAY with the cold rice with tomatoes and pesto!!

Notes

To your cold rice with tomatoes and pesto, you can also add other cooked vegetables, or drained canned tuna, or cooked ham, the important thing is not to add leafy vegetables that will tend to wilt during the hours in your cooler bag.
