The creamy cauliflower and saffron pasta is easy and very quick to prepare and you will see that everyone at the table will enjoy it, even those who do not like cauliflower: when steamed and seasoned with saffron it acquires a wonderful flavor. With very few ingredients you’ll have a first course that even the little ones will be tempted to eat; it’s so creamy and light — apart from a few tablespoons of extra virgin olive oil — it will drive you crazy. Ingredients for creamy cauliflower and saffron pasta

  • 3 1/4 cups pasta (short)
  • 1 1/3 lbs cauliflower
  • 3 tbsps extra virgin olive oil
  • 1 packet saffron
  • 2 pinches salt
  • 1/2 cup Grana Padano PDO (grated)

  • 1 Immersion blender
  • 1 Pan
  • 1 Pot for cooking the pasta

Preparation creamy cauliflower and saffron pasta

  • Prepare the creamy cauliflower and saffron pasta starting with the cooking of the cauliflower.

    Separate the cauliflower into florets and boil them in plenty of lightly salted water until they are very tender.

  • Reserve the cauliflower cooking water and place the florets in the immersion blender cup together with the extra virgin olive oil.

  • Take 4 tablespoons of the cauliflower cooking water and dissolve the saffron in it, add it to the blender cup and blend.

  • Meanwhile, cook the pasta in the remaining water.

    Once you have the cauliflower cream, place it in a large pan that can also hold the pasta.

  • Drain the pasta while still al dente and sauté it in the pan with the sauce, adding one ladle of the cooking water.

  • Salt the creamy saffron pasta only after tasting, sprinkle with grated cheese before serving.

Storage for creamy cauliflower and saffron pasta

The creamy pasta should be eaten immediately after preparation; however, you can prepare the cauliflower cream in advance and store it in the refrigerator for 1 day.

If you have leftover pasta, put it in the oven with pieces of mozzarella and gratin it.

Variations

If you like spicy flavors you can add 1 fresh chopped chili pepper.
