Ingredients for Creamy Chicken Rolls with Wine

  • 1.1 lbs chicken breast (in slices)
  • 4.2 oz speck (diced)
  • 3.5 oz mozzarella (diced)
  • 1 glass white wine
  • 2.1 oz flour
  • 3 tbsps extra virgin olive oil
  • Half shallot
  • to taste salt
  • 1 sprig rosemary
  • to taste sage (fresh)

Preparation of Creamy Chicken Rolls with Wine

  • To prepare the creamy chicken rolls with wine, first chop the mozzarella and speck together.

    Add a few rosemary needles and mix them.

  • If the chicken slices are too thick, pound them between 2 sheets of parchment paper using the meat mallet.

  • Fill each slice with a generous spoonful of filling and roll it up.

    You can secure each roll with toothpicks or tie them (as we did) with kitchen twine that can be easily removed.

  • Finely chop the shallot and let it wilt in a pan with extra virgin olive oil until it becomes almost transparent.

  • Quickly roll the creamy chicken rolls with wine in the flour, shaking off the excess.

    Brown them in the pan with the shallot on all sides for 5 or 6 minutes, add a sprig of rosemary and some sage leaves.

  • Then deglaze with the white wine, allowing it to evaporate, and finish cooking over high heat for about 10 minutes.

  • When the cooking base has thickened and the chicken rolls have become creamy, turn off the heat.

  • Arrange them on a serving plate, cut off the kitchen twine with scissors, and serve, sprinkling with the cooking base and some sage and rosemary leaves.

How to Store Creamy Chicken Rolls

You can store them in the fridge in an airtight container for 2 days.

If you prefer, you can freeze them while still raw and then cook them in the pan without defrosting, extending the times and on low heat.
