Ingredients for the creamy turkey salad without mayonnaise

  • 1.3 lbs turkey thighs (drumsticks)
  • 14 oz potatoes
  • 9 oz carrots
  • 4.2 oz peas (fresh or frozen)
  • 3 tbsps chopped parsley
  • 4.2 oz cream cheese (like Philadelphia)
  • 2 tbsps extra virgin olive oil
  • 3 pinches salt
  • 2 pinches pepper

Preparation of creamy turkey salad without mayonnaise

  • Preparing the creamy turkey salad without mayonnaise is simple.

    The only drawback is the cooking of the turkey drumsticks, which in a regular pot requires at least 1 hour.

  • So in a large pot, place the turkey drumstick, cover with water, add the leaves of two celery stalks, half an onion, a few cloves, and 1 carrot, and bring to a boil.

  • Once boiling, lower the heat, cover with the lid, and let it cook for at least 1 hour.

    Alternatively, you can cook with the vegetables but in a pressure cooker, counting 30 minutes from the whistle of the pot.

  • Let it rest in the pot for 15 minutes, then remove the turkey drumsticks and let them cool slightly on a cutting board.

  • Meanwhile, peel potatoes and carrots and cut them into small pieces, then cook them for 15 minutes in plenty of slightly salted water.

  • If you use frozen peas, you can cook them together with potatoes and carrots, otherwise, if they are fresh, cook them alone because they cook faster.

  • Drain the vegetables and place them in a large salad bowl, chop the parsley and add it.

  • Shred the turkey drumsticks and mix them with the vegetables.

  • Work the cream cheese with the extra virgin olive oil to make it creamy, then incorporate it into the creamy turkey salad.

  • Salt and pepper, and if you see that the cheese cream is too thick, add more oil to make it more fluid.
