Ingredients for the Crispy Puff Pastry Bundles with Potatoes

  • 2 rolls puff pastry (rectangular)
  • 14 oz potatoes
  • 1 egg (medium)
  • 1 1/4 cups flour
  • 2 pinches salt
  • to taste black pepper
  • 1 teaspoon dried oregano
  • 5 oz latteria cheese (or Asiago)
  • 1 egg (for brushing)
  • 1/2 cup grated Grana Padano

  • 1 Potato ricer
  • 1 Baking tray

Preparation of Crispy Puff Pastry Bundles with Potatoes

  • To prepare the Crispy Bundles with Potatoes, first, wash the potatoes very well with the skin on.

    Cook them in plenty of lightly salted water until tender.

  • Pass the potatoes through the potato ricer (you’ll see the skin remains inside).

  • Gather the puree in a bowl, add the flour all at once, salt, pepper, and season with a bit of dried oregano.

  • Mix well to combine the ingredients, then incorporate the egg and the 1/2 cup of grated Grana.

  • Use your hands to form a homogeneous and compact mixture, turn the mixture onto a work surface, breaking off pieces of dough.

  • Form logs as if to make gnocchi, cutting them 2 1/3 inches long, also cut the cheese to the same size and insert it into the potato log.

  • Unroll the puff pastry and cut rectangles of 3 1/4 inches, then insert 2 potato logs and roll towards the center.

  • Seal the edges well by applying gentle pressure and arrange the crispy potato bundles on a baking tray lined with parchment paper.

  • Preheat the oven to 356°F in static mode, then brush the bundles with a beaten egg.

  • Bake in the center rack of the oven for 15/18 minutes.
