Curried Cauliflower

Curried cauliflower is an easy and very tasty side dish, also light, that can be prepared in a short time. If you cook the cauliflower by steaming like we do, it will retain all its properties. This side dish can be frozen and taken out a few hours before eating to heat it in the oven or microwave, and in no time, it will be as good as freshly made. I always do this to have it available when time is short or when cauliflower is out of season.

Ingredients for curried cauliflower

  • 1 cauliflower
  • 5 tablespoons extra virgin olive oil
  • 3 teaspoons curry
  • 1 tablespoon parsley (freshly chopped)
  • 3 pinches salt
  • 2 tablespoons Parmigiano Reggiano DOP
  • 1 pinch pepper

How to prepare curried cauliflower

  • To prepare the curried cauliflower, first clean the cauliflower by removing the green leaves and separating the florets.

  • If the florets are too large, divide them in half and then cook them, preferably by steaming, for 10 minutes. They need to be cooked but still very firm.

  • In a bowl, mix the extra virgin olive oil with the spices, salt, and pepper, and the freshly chopped parsley, then immerse the cauliflower florets.

    Stir them using a spoon so they absorb all the flavors.

  • Preheat the oven to 428°F and line a baking tray with parchment paper, place the curried cauliflower without overlapping the florets, sprinkle with Parmesan and bake.

  • Bake in the middle rack of the oven for 15 minutes. After cooking, remove from the oven, sprinkle again with freshly chopped parsley, and serve very hot!!

How to store curried cauliflower

Curried cauliflower keeps in the refrigerator for 2 days, stored in an airtight container.

You can freeze the cauliflower once cooked and cooled. If you like spicy flavors, you can add a chopped chili pepper.
