Delicious and Easy Cauliflower Croquettes are simple to make. If you have some cauliflower in the refrigerator, I recommend preparing them because even the kids will love them.

At my house, every time I make them, they barely make it to the table as everyone samples them while they’re still hot.

To prepare them, you need only a few simple steps and a few ingredients: a cauliflower, some eggs, and good grated cheese, and you’re done.

If you prefer not to fry them, you can cook them in an air fryer or in the oven with the microwave using the micro + grill function, and they’ll be ready faster and without frying oil.

Ingredients for Delicious and Easy Cauliflower Croquettes

  • 2.2 lbs cauliflower (net of waste)
  • 4.2 oz grated Parmesan cheese
  • 2 eggs
  • 3 tbsp breadcrumbs
  • to taste chopped parsley
  • 2 pinches salt
  • to taste black pepper (ground)
  • to taste sunflower oil (or peanut oil, for frying)

Steps

  • They are simple to prepare; first, detach the cauliflower florets and steam them for 4 or 5 minutes.

    Just put one inch of water in a large pot and place the steaming basket on top.

  • Steaming prevents the florets from absorbing too much water, so everything will be much drier.

  • Place the cooked cauliflower in a bowl and mash it with a fork to make a coarse puree.

  • Season it with salt, ground pepper, and fresh chopped parsley, and let it cool.

  • Once cooled, add the eggs, Parmesan, and breadcrumbs, and mix with your hands.

  • With wet hands, take small portions of the mixture and form croquettes giving them an elongated shape.

  • Place them on a cutting board, and once they are all ready, heat the oil for frying in a large skillet with high edges.

  • Fry a few cauliflower croquettes at a time, turning them a couple of times until they are golden and crispy on the outside.

  • As they are ready, drain them with a skimmer, place them on absorbent paper to remove excess oil.

    Serve them immediately while still hot.

  • You can cook the cauliflower croquettes in an air fryer at 392°F for 15 minutes, turning them halfway through cooking and just spraying them with extra virgin oil.

  • If you have a microwave with micro + grill function or Crisp function, preheat the Crisp plate lightly greased with extra virgin olive oil (or a suitable baking pan).

    Arrange the croquettes without overlapping, spray with a little oil, and start cooking on crisp or micro + grill function for 10 minutes.

  • Remove the pan, turn the cauliflower croquettes, and cook for another 3 or 4 minutes.

Tips and Variations

If you prefer, you can roll the cauliflower balls in breadcrumbs before frying.

Instead of parsley, you can use rosemary or oregano.

If the mixture is too sticky, you can add more breadcrumbs but don’t overdo it.
