Ingredients for the delicious bruschetta recipe

  • 4 slices bruschetta bread
  • 2 cloves garlic
  • 5.3 oz cream cheese (such as Philadelphia)
  • 2 eggs
  • 2.1 oz smoked bacon
  • 2.8 oz gorgonzola (spicy or sweet)
  • 8 sun-dried tomatoes in oil
  • Half onion
  • Half black oval eggplant
  • 1 zucchini
  • 3 tablespoons tomato sauce
  • to taste extra virgin olive oil
  • 1 pinch salt
  • pepper

Preparation of delicious bruschetta

For the bruschetta with vegetables

  • To prepare the delicious bruschetta we start with those with vegetables, so trim the zucchini and eggplant and cut them into small pieces.

  • Slice the onion thinly and in a pan with a drizzle of extra virgin olive oil, let all the vegetables wilt for 5 minutes, then add the tomato sauce.

    Add salt and pepper and continue cooking until the vegetables are tender but still intact, letting the sauce reduce.

    Keep aside warm.

  • In a non-stick pan, sweat the bacon for a few minutes and in the meantime, beat the eggs in a bowl with salt and pepper, once the bacon is crispy add the eggs and start stirring to scramble them.

    Turn off as soon as the egg sets and keep warm.

  • Cut each slice of bruschetta bread into 3 parts then grill them until they are golden and hot, rub them very well with garlic.

  • Place gorgonzola pieces and drained sun-dried tomatoes on a few slices.

  • Spread the Philadelphia generously on other slices of bruschetta bread and top with a generous spoonful of vegetables in sauce.

  • Finally, finish the delicious bruschetta by spreading the remaining slices with Philadelphia and topping with two spoonfuls of scrambled eggs with bacon.
