Ingredients for Easy and Super Quick Chicken with Tuna Sauce

The ingredient quantities are for a hearty main dish without a first course, so if you serve a first course, adjust accordingly

  • 1.65 lbs chicken breast
  • 1 tbsp extra virgin olive oil
  • 0.7 oz butter
  • 1 clove garlic
  • 2 pinches salt
  • 2 eggs (hard-boiled)
  • 6.35 oz canned tuna in oil
  • 1 tbsp salted capers
  • 3 fillets salted anchovies
  • as needed vegetable broth
  • 1 tbsp extra virgin olive oil

Preparation for Easy and Super Quick Chicken with Tuna Sauce

  • To prepare the easy and super quick chicken with tuna sauce, first cut the chicken breast into slices not too thin.

    Hard-boil the eggs in a saucepan then cool them and peel them.

  • In a nonstick pan, heat the extra virgin olive oil with butter and the whole garlic clove.

  • When the butter is melted, cook the chicken slices over high heat for a few minutes on one side, flip them and let them brown on the other side.

  • In the meantime, while the chicken slices are cooking, peel the hard-boiled eggs, place them inside the glass of the blender along with the drained tuna, capers, anchovy fillets, extra virgin olive oil, and a little broth.

  • Blend intermittently and if necessary add gradually more broth (cold) and continue blending until a more or less creamy consistency is achieved depending on your taste.

  • When the easy and super quick chicken with tuna sauce is well cooked (it will take about 10 minutes), salt it.

    Arrange the slices on a serving platter and drizzle with the tuna sauce.

  • Decorate with more capers that have been desalinated and squeezed and if you like, also with some freshly chopped parsley and serve.
