Cooking en papillote, especially with fish, ensures not only even cooking but also the preservation of all aromas and flavors inside the package.
The result? A deliciously tender baked sea bream, perfectly cooked, where the flesh falls away from the bone, making it easy to eat with just a fork.
Only a few simple ingredients are needed: the sea bream, coarse salt, lemon slices, and a few aromatic herbs, and you’re all set.
You can enhance the package with halved cherry tomatoes (if in season), black or taggiasca olives, and why not, some onion wedges or potatoes.
Once the package is closed, simply place it on a baking sheet suitable for the oven or air fryer, and in no time, the dish will be ready, hot, soft, and steaming.
I know the baked sea bream isn’t photogenic, but trust me when I say it’s too good, really too good.

Ingredients for Easy Baked Sea Bream
- 2 sea bream
- 2 cloves garlic
- 2 tablespoons extra virgin olive oil
- 1 sprig rosemary
- to taste dried oregano
- 4 pinches coarse salt
- 1 lemon

Preparation of Easy Baked Sea Bream
To prepare the baked sea bream, first wash and clean the fish well by removing the entrails and rinsing several times to remove the scales.
Dry thoroughly both inside and outside.
Place each sea bream on a square of parchment paper, slice the lemon and crush the garlic cloves without peeling them.
Season with coarse salt both inside and outside, garnish with chopped rosemary needles and dried oregano.
If you prefer, you can replace the oregano with fresh parsley. In this case, insert a sprig of parsley inside each sea bream without chopping it.
Place half a lemon slice behind the gills and 2 slices inside the belly of each sea bream along with 1 garlic clove.
Drizzle with a little olive oil inside and out and close the package like a candy, securing the ends with kitchen string.
If you have an air fryer, place the packages inside the basket, start the oven function at 392°F.
Cook the sea bream for 12 minutes, open the air fryer and turn the packages over, cooking for another 5 minutes.
Bring them to the table with the package still closed, and once opened, you’ll smell all the aromas filling the table.
Place the 2 packages on a baking sheet, preheat the oven to 392°F in static mode.
Place the baking sheet on the middle rack and bake for 30/40 minutes.
Inside each package, you can add cherry tomatoes halved.
You can also use orange slices, preferably organic, to insert along with the lemon slices.
If you want to make it with a side dish, add potato slices inside the package.
