Easy Bulgur Salad

Not in the mood to spend time at the stove and want a balanced and simple yet tasty first course? The Easy Bulgur Salad is also quick.

Did you know that bulgur is dried and ground durum wheat? Very similar to couscous in appearance but couscous is bran-free while bulgur is whole grain and contains bran.

What else can I say other than this Bulgur Salad is very simple to make and very quick, you can make it with canned peas, or cook the bulgur along with fresh or frozen peas and it will all be perfect.

Ingredients for Easy Bulgur Salad

  • 1 1/4 cups bulgur
  • 1/2 cup peas, canned, drained (or frozen)
  • 1/3 cup carrots
  • 8 sun-dried tomatoes in oil
  • 1/4 cup black olives (or Taggiasca)
  • 1/2 cup provola cheese (sliced or in pieces)
  • to taste basil
  • 2 pinches salt
  • 2 tablespoons extra virgin olive oil

Preparation of Easy Bulgur Salad

  • Place a pot full of water on the stove, once boiling add salt and pour the bulgur.

  • If you are using frozen or fresh peas, add them to the pot with the bulgur and cook for 15 minutes, but check the time indicated on the package.

  • Meanwhile, cut the olives in half, the cheese into pieces, and chop the sun-dried tomatoes.

    The carrots can be cut into julienne strips or diced.

  • Place all the ingredients in a large salad bowl and mix them, drain the bulgur and peas, and rinse under cold running water.

  • Add the bulgur to the salad bowl with the rest of the ingredients, salt, season with extra virgin olive oil and basil leaves, and mix well to flavor.

    Let rest a few minutes before serving.

Storage advice and variations

You can use couscous or quinoa instead of bulgur.

If you don’t have sun-dried tomatoes you can use fresh tomatoes.

The Bulgur Salad can be stored in the refrigerator for 1 day in an airtight container.
