These fritters we made today are really simplistic and very quick; one leads to another, I assure you. Plain for us, but you can fill them using a pastry bag and your favorite cream, or flavor them with orange zest instead of lemon, or make half of each so you’re spoiled for choice.

Ingredients for easy carnival fritters
- 1 cup milk
- 2 tbsps vegetable oil (various)
- 2 cups all-purpose flour
- 1/2 cup sugar (+ extra for coating)
- 1 tsp baking powder
- 1 egg
- 1 lemon zest
- 1 pinch salt

How to make easy carnival fritters
Prepare the easy carnival fritters by mixing the sugar with the egg, oil, and milk in a bowl using a hand whisk until everything is combined.
Sift together the flour with salt and baking powder and add it to the preparation, always mixing with the hand whisk.
Incorporate the grated zest of 1 lemon.
Make sure there are no lumps, and the consistency should be quite liquid to let it drop with a spoon.
Cover the bowl and allow the batter to rest for at least 30 minutes, then heat the oil for frying (I recommend peanut oil as it has a fairly high smoke point).
Once the oil reaches temperature, take one portion of batter with a spoon and let it drop quickly.
Fry a few at a time to avoid the oil temperature dropping too much; turn them as soon as they are golden and puffed up, and finish frying them on the other side.
Drain them with a slotted spoon on a plate covered with absorbent paper, sprinkle with some sugar or colored sprinkles, and serve.
How to store carnival fritters
The fritters can be stored under a glass dome for up to 1 day and should be consumed warm or still hot, so before enjoying leftovers, you can also heat them in the microwave.
Variations
You can enrich them by adding a handful of raisins soaked in grappa (if not intended for children).
