  • 2.2 lbs cherry tomatoes
  • 3 tbsps extra virgin olive oil
  • 2 tsps salt
  • 4 tsps sugar
  • 2 tsps dried oregano

  • The classic cooking of confit tomatoes takes place in a static oven at 300°F (fan oven at 285°F) for about 1 and a half hours.

  • Initially, the tomatoes (washed, dried, and halved) are placed on a baking tray lightly greased with extra virgin olive oil.

    Alternatively, covered with dampened and wrung-out parchment paper.

  • Salt them, sprinkle with sugar, oregano, and extra virgin olive oil, and if you wish, freshly ground black pepper.

    You can use brown sugar and spices to taste (for example thyme or rosemary).

  • During cooking, the slow heat of the oven allows the tomatoes to lose moisture and develop a soft texture and a delicious caramelization on the surface.

  • Bake the tomatoes on the middle rack of the preheated oven at 300°F for about 1 and a half hours.

  • The long low-temperature cooking is essential to achieve the typical texture and intense, sweet taste of oven-baked confit tomatoes.

  • This preparation takes longer than the microwave version, but the final result is truly exceptional.


    The oven-baked confit tomatoes can be stored in the fridge for 1 week in a glass jar with a few tablespoons of extra virgin olive oil and can be reheated before serving.

  • For a quicker version of confit tomatoes, you can use the microwave.


    In this case, the washed, dried, and halved tomatoes are placed in a specific microwave-safe dish (preferably a “crisp” plate).

  • Then seasoned with oil, salt, sugar, and oregano, and if you prefer, add other spices or freshly ground black pepper.

  • Place the crisp plate on top of the microwave turntable, close the door, and set the crisp function or microwave + grill.


    Initially set 15 minutes but depending on the size of the tomatoes, it may take a few more minutes.

    This microwave version is definitely faster than the traditional recipe, requiring only 15/20 minutes.

  • The result is still excellent, with soft, sweet tomatoes and an intense flavor.


    The microwave confit tomatoes can be stored in the fridge for 1 week in a glass jar with a few tablespoons of extra virgin olive oil.

    They can be reheated before serving.

You can fill jars, cover them with oil, close them with new lids, and boil them as you do for tomato puree for at least 20 minutes, let them cool in the water, and then store them in the pantry.
