What You Need for the Easy Stracciatella Cake

  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup cornstarch
  • 1/2 cup milk
  • 1/2 cup sunflower seed oil
  • 4 oz dark chocolate
  • 3 eggs
  • 1 packet baking powder for cakes
  • 1 pinch salt
  • 1 cup sugar

  • 1 Cake Pan 24/26 cm diameter with springform
  • 1 Food Scale

How to Prepare the Easy Stracciatella Cake

  • To prepare the stracciatella cake, first separate the egg yolks from the whites, beat the whites with a pinch of salt until stiff peaks form, and set aside.

    Then, beat the yolks with the sugar until you get a foamy and almost white mixture.

    After that, add the milk and oil and continue beating with the electric beaters.

  • Meanwhile, sift the flour with the cornstarch and baking powder, start incorporating it into the egg mixture one spoonful at a time.

    This step can be done by hand to avoid deflating the mixture.

  • Once you have added all the flour, fold in the egg whites set aside, being careful not to deflate the mixture, with movements from bottom to top.

  • Chop the dark chocolate, and toss it in some flour to prevent it from sinking to the bottom of the batter, incorporate it, give a gentle stir, and pour your batter into a springform pan previously buttered and floured.

  • Bake in a preheated oven at 340°F for 40/45 minutes, always doing the skewer test, if it comes out dry, your cake is ready, remove from oven and let it cool in the pan, then remove the springform, sprinkle with powdered sugar if desired, and enjoy with family.

Storing Easy Stracciatella Cake

The stracciatella cake can be stored under a glass dome for 3 days.

You can freeze the cake either whole or cut into portions, then let it thaw at room temperature before eating.

Variants

You can substitute milk with an equal amount of cream
