Ingredients for Eggplant Skewers with Meatballs
- 3 eggplants (long black)
- 1.1 lbs ground beef (or mixed beef and pork)
- 1 egg
- 1.8 oz grated Parmesan
- 3 tbsps breadcrumbs
- 2 pinches salt
- to taste black pepper (ground)
- 1 tbsp chopped parsley
- 3 tbsps extra virgin olive oil
Preparation of Eggplant Skewers with Meatballs
Prepare the Eggplant Skewers with Meatballs starting with the meatballs, then place the ground meat, even mixed, in a large bowl.
Add the egg, grated cheese, spices, and breadcrumbs and mix well with your hands to combine.
If the mixture is too soft, add another tablespoon of breadcrumbs.
With slightly oiled hands, form small meatballs of 30 grams (about 1 oz) each.
Trim the eggplants and cut them into slices 3/4 inch thick, season with salt and a drizzle of extra virgin olive oil.
Take the wooden skewers and skewer alternating a slice of eggplant and a small meatball.
Gradually flatten the small meatballs to give them a flatter shape, start and end with a slice of eggplant.
Cook the eggplant skewers on an electric grill for 15 minutes turning them halfway through cooking and brushing them with extra virgin olive oil.
Alternatively, you can cook them on a barbecue or on the coals for 15 minutes, turning them a couple of times.
Alternatively, they can be cooked in a preheated oven at 375°F in static mode for 20 minutes on the middle shelf, turning them halfway through cooking.
Or in an air fryer for 15 minutes at 340°F.
Tips and Variations
If you prefer, you can cut the eggplants into thicker slices 1 1/4 inches.
The eggplant and meatball skewers can be made in a finger food version on short skewers with 3 small meatballs per skewer.
You can use ground beef or veal, with or without pork, and you can also add 1 sausage without casing and crumbled into the mixture.
Use other vegetables for an extra touch of color; red bell pepper, zucchini, and onion slices are excellent choices.
For softer small meatballs, you can add the crumb of one bun soaked in milk and squeezed.
