She convinced me to get the dried fava beans which are very rare to find here, and the day I found them, I obviously couldn’t resist preparing this Fava Bean Purée in a pressure cooker.
An ideal side dish on autumn evenings, really very simple to prepare, which was obviously well received even by my husband who is very skeptical about new things.
You can certainly prepare it in a regular pot, but it really requires many hours of cooking, so our advice is to use the pressure cooker, which not only significantly reduces the cooking time but also saves on the energy bill.

Ingredients for Fava Bean Purée in a Pressure Cooker
- 1.1 cups dried fava beans
- 1 onion (medium white)
- 3 tbsps extra virgin olive oil
- 2 pinches salt
- 1 pinch black pepper (or chili pepper if you like it spicy)

Preparation of Fava Bean Purée in a Pressure Cooker
To prepare the Fava Bean Purée in a pressure cooker, first rinse the dried fava beans well and remove any impurities.
Soak them in plenty of cold water for 12 hours.
After the time has passed, rinse the fava beans well and place them in the pressure cooker, covering them with water.
Bring the Fava Bean Purée to a simmer, lowering the heat when the cooker starts to whistle, then cook for 30 minutes.
In the meantime, clean and slice the onion, cooking it in a pan with extra virgin olive oil.
It will take about 12 minutes, so when the onions become transparent, turn off the heat and set aside.
Once the fava beans are cooked, turn off the heat and release the pressure from the cooker.
Then, mash the fava beans into a purée using a wooden spoon.
You can use an immersion blender for a creamier result, adjust the salt.
Serve the Fava Bean Purée topped with the sautéed onion and its cooking juices.
