Five Grains with Pumpkin and Herbs, tasty, quick and economical dish, a way to get children and not only to eat grains, a triumph of colors that always goes well in my house, as we know, grains if of good quality are very beneficial, even better if we find organic ones, although they require more effort in cooking, their taste is excellent.

A first course of winter flavors and colors that with the addition of frozen peas is really tasty, if you try it you will agree with me, as always I look forward to your feedback.

Ingredients for Five Grains with Pumpkin and Herbs

  • 2.1 oz spelt
  • 2.1 oz pearled barley
  • 2.1 oz rice (Thai)
  • 2.1 oz buckwheat
  • 2.1 oz oat flakes
  • 10.6 oz pumpkin (already cleaned)
  • 1/2 cup dry white wine
  • 3 tbsp frozen peas
  • 4.2 cups vegetable broth
  • 1 tbsp onion (minced)
  • 1 tbsp carrots (minced)
  • to taste extra virgin olive oil
  • to taste herbs (oregano, marjoram, parsley)

Preparation of Five Grains with Pumpkin and Herbs

  • To prepare the five grains with pumpkin and herbs first boil some broth.

    Then clean the pumpkin and cut it into pieces about 3/4 inch and set aside.


    Chop onion and carrot into small pieces (or use my sauce base) and sauté in a little extra virgin olive oil. When it starts to become translucent, add the pumpkin, sauté it well, without letting it color.

  • Deglaze with white wine, let it evaporate, then add a ladle of broth, lower the heat and cook for 10 minutes, adding more broth if it dries too much.

  • Then, add the 5 grains, let them absorb flavors, and gradually add broth, always hot, as for a normal risotto.

    After 5 minutes add the frozen peas.
    Occasionally, stir and try to mash the pumpkin a little, to make it become creamy.

  • Cook for the average time of all the grains indicated on the packages, at the end of cooking add herbs to taste, adjust salt and pepper and serve.
