Fragrant Orange Carnival Fritters

The orange carnival fritters as we prepare them are extremely flaky, not greasy, and with very little butter. You can use lemon zest instead of orange if you prefer, but I assure you they are delicious as they are, full of bubbles, and cook in just a few seconds.
After all, fried food is always good, but these fritters are truly worth it. You’ll see that they take very little time to prepare, and your guests will surely appreciate that they are homemade and not the packaged ones found in stores.

Ingredients for carnival fritters

  • 2 cups all-purpose flour
  • 1 egg
  • 2 tbsp butter
  • 3.5 tbsp milk
  • 2 tbsp sugar
  • 1 orange zest
  • 1 pinch salt
  • to taste vanilla powdered sugar

Preparation of carnival fritters

  • Preparing the carnival fritters is really easy and quick.

    First, place the flour, sugar, and the grated zest of 1 orange along with the pinch of salt into a large bowl, and mix with the fork.

  • Now add the egg, the butter at room temperature, and start mixing initially with the fork and gradually add the milk.

  • When you find it hard to work the mixture with the fork, turn it onto the work surface.

    Knead it with your hands until you have a smooth and homogeneous mixture.

  • Cover the dough with cling film and let it rest in the refrigerator for at least 1 hour.

  • After the resting time, take the dough for the orange carnival fritters and flatten it with the pasta machine by passing it several times.

    If you don’t have a pasta machine, you can do it with a rolling pin, working with a small amount of dough at a time, roll it into a thin sheet, fold it in half, and roll it again.

  • Remember, the more you fold the dough over itself, the more bubbles the carnival fritters will make when fried.

  • If you have a pasta machine, pass it from the thickest to the thinnest position, folding the dough a couple of times.

    Finally, cut the fritters with the pastry wheel to the size you like, and make two cuts lengthwise on each so they curl more.

  • Heat plenty of frying oil in a small, tall pan, and measure with a thermometer that the temperature does not exceed 338°F, then fry one or at most two carnival fritters at a time.

  • If you don’t have a kitchen thermometer, just insert a small piece of dough; if it floats immediately, it means the oil has reached the right temperature.

  • You’ll see that in just a few seconds, the fritters will puff up and become golden.

    Then turn them with a slotted spoon and let them become golden on the other side for a few more seconds.

  • Drain them on kitchen paper, and once cooled, sprinkle with powdered sugar.

How to store orange carnival fritters

The fritters can be stored in a paper bag for 2 days or under a cake dome.

Variations

You can replace the orange zest with lemon zest. If you prefer, you can use skim milk or even soy milk.
