Luckily, there are many dishes where eggplants are cooked with their skin full of vitamins and minerals, but for those where we need to remove it, we don’t think about it and throw it away. Next time you peel an eggplant, do it with a potato peeler (this way the peel will have almost no flesh) and it will be extremely crunchy.

Ingredients to Prepare Fried Eggplant Peels
- 3 eggplants (only the peel)
- to taste flour
- 2 pinches salt
- to taste extra virgin olive oil (or frying oil)

Preparation of Fried Eggplant Peels
Easier done than said, really. Peel the eggplants and prepare the recipe that requires it, then set the peel aside.
Wash the eggplant peels, dry them, and cut them into matchsticks as finely as possible.
Place the peels in a bowl with a little flour and mix them to make sure they are coated in flour.
Shake off the excess.
Heat plenty of frying oil in a small pan and fry the eggplant strips a few at a time.
In just a few moments, you will see them curl up and turn golden, then drain them with a slotted spoon.
Let them lose the excess oil on absorbent paper and salt them.
If you have a modern microwave with a crisp plate (the one used to brown), you can make eggplant peels with just a thread of oil.
Pass the eggplant peels in a little flour, shaking off the excess.
Lightly oil the crisp plate with extra virgin olive oil and heat it up with the CRISP function for 2 minutes.
Remove it using a glove or pot holder and spread the eggplant strips on top without overlapping them.
Cook them always with the CRISP function or equivalent for 4 minutes, lightly drizzled with extra virgin olive oil.
Check the degree of browning, flip them, and finish cooking for another 2 minutes.
Leave them on the crisp plate out of the microwave for another 3 or 4 minutes (you will hear the peels still sizzling) and serve them sprinkled with salt.

Can I make them in an air fryer?
Of course, follow the recipe as is and cook in an air fryer at 375°F for 15 minutes with just a spray of extra virgin olive oil.
Can they be made in batter?
Yes, you can prepare the batter with 1/3 cup of flour, 3 tbsp of beer or water, and a pinch of salt. Dip the eggplant strips and fry them in plenty of frying oil.
