Genoese Meatloaf with Green Beans and Potatoes

The Genoese meatloaf with green beans and potatoes is an obviously vegetarian dish widely popular in Genoa that obviously contains no meat.

In Genoa, meatloaf is understood to be without meat, and there are families that have their own recipe and add other vegetables or sauté the green beans (especially) in a pan before preparing everything.

When one thinks of Genoa, the first things that come to mind are Pesto, then the farinata and not less important the focaccia, a true institution in Liguria which they even eat in the morning with a cappuccino.

Liguria cuisine is more a land-based cuisine rather than sea-based, contrary to what one might think, and it is rich in country recipes passed down from generation to generation, and I love it.

Ingredients for the Genoese Meatloaf with Green Beans

  • 2.2 lbs potatoes
  • 1.8 lbs green beans
  • 4 eggs (medium)
  • 1 1/2 cups grated parmesan
  • 2 pinches salt
  • 1 tsp nutmeg
  • to taste black pepper
  • 2 sprigs marjoram
  • 1/2 cup grated parmesan
  • to taste butter
  • 2 oz breadcrumbs

  • 1 Potato Masher
  • 1 Baking Dish oven pyrex
  • 1 Pot

Preparation of Genoese Meatloaf with Green Beans

  • To prepare the Genoese meatloaf with green beans, first wash the potatoes well and cook them with the skin on.

    It will take about 30 minutes (depending on their size), then drain them and pass them through the potato masher (you’ll see the skin stays inside).

  • Gather the puree into a bowl, and while it cools slightly, clean the green beans by removing the ends, then boil them in the same water used for the potatoes.

    It will take 5 minutes, drain them and cut them into 1.5-inch pieces.

  • Once the potatoes are warm, add the green beans, eggs, grated cheese to the bowl, and mix well to combine.

    Season with salt, pepper, and the chopped marjoram leaves along with the nutmeg.

  • Preheat the oven to 350°F in static mode, butter a glass baking dish, and sprinkle it with breadcrumbs.

  • Pour the mixture for the Genoese Meatloaf with Green Beans and level it out on the surface.

    Sprinkle with breadcrumbs mixed with grated cheese and distribute small pats of butter on top.

  • Bake on the center rack of the oven and cook the Genoese meatloaf with green beans for at least 45 minutes.

  • You can serve it hot, just out of the oven, or warm.

How to Store Genoese Meatloaf with Green Beans

You can keep it in the fridge well sealed in an airtight container for 2 days.

If you prefer, you can freeze it even raw to then let it thaw in the fridge before baking.
