Ingredients to Prepare Gratinated Cardoncelli Mushrooms
- 1.54 lbs cardoncelli mushrooms
- 1 bunch parsley
- 1.25 cups breadcrumbs
- 2 cloves garlic
- 1.06 oz Grated Grana Padano (or parmesan or pecorino of choice)
- 2 pinches salt
- to taste black pepper (ground)
- 2.82 tbsp extra virgin olive oil
Tools

- 1 Baking Sheet oven
Steps
First, chop the parsley and garlic with a chopper equipped with blades, then add the extra virgin olive oil.
Place the breadcrumbs in a bowl, add the parsley mixture and mix well to combine.
Add the grated cheese and mix again, season with salt and pepper.
Clean the cardoncelli mushrooms well with a damp cloth or a paper towel, and if you have very large mushrooms, cut them in half.
Preheat the oven to 375°F, static mode, and line a 15.75 x 11.81-inch baking tray with parchment paper.
Make a layer of flavored breadcrumbs on the parchment paper.
Quickly brush the cardoncelli with a little oil.
Place them upside down on the breadcrumbs close to each other so they don’t fall.
Sprinkle the mushrooms with the remaining breading, pressing lightly with the back of a spoon.
Bake in the middle rack of the preheated oven and cook the gratinated cardoncelli mushrooms for 25 minutes or until you see the breading golden and crispy.
If you have a microwave with a crisp function or the combined microwave + grill function, you can make cardoncelli mushrooms in the microwave.
Then preheat the crisp plate for 2 minutes, spread the parsley breadcrumbs on top.
Place the mushrooms upside down, distributing the remaining breadcrumbs on top.
Bake and cook with crisp function for 15 minutes or microwave + grill for 18 minutes.
At the end of cooking, let the mushrooms rest inside the microwave for another 3 or 4 minutes because they will continue to cook.
Storage, Tips, and Variations for Gratinated Cardoncelli Mushrooms
The gratinated mushrooms can be stored in the refrigerator in an airtight container for 2 days, and they are delicious even at room temperature.
If you don’t like or don’t have it, you can skip the grated cheese.
If you want, you can add fresh basil leaves and also a sprig of dry oregano along with the parsley.
With the same method, you can make porcini mushrooms, pleurotus (by increasing the cooking time by at least 5 minutes) or honey mushrooms or chanterelles by cooking them for only 15 minutes because they are much smaller and tender.
